- 新道蒸溜所の新たな挑戦の象徴となる「EXPERIMENTAL」シリーズ。
「EXPERIMENTAL」とは、「実験的な」の意。ジャパニーズウイスキーの先達に大いなるリスペクト（敬意）を有する私たちは、謙虚な挑戦者として「完成品なんておこがましい。現在自分たちができうる最高のご提案をさせていただこう」という想いのもと、「EXPERIMENTAL」シリーズと名付けました。

上記3つをテーマに掲げ、「EX02」の開発を行いました。新道蒸溜所のこだわりは、造り込まれた甘美なニューメイクと、多様な樽による熟成にあります。そのこだわりを忠実に表現しながらも進化を明確に示す一本が、EXPERIMENTALシリーズ第2弾「EX02」です。
2つ目のテーマである「熟成を重ねる原酒たち」について。2025年6月の「EX01」のリリースから約8ヶ月。その間、私たちの原酒はより多様な樽で熟成を重ね、確かな時間の経過を刻んできました。
「EX01」は、ニューメイクの魅力をあえてシンプルな樽構成で表現（※1）しましたが、一方「EX02」では、その熟度を増した原酒を用いてヴァッティングすることで、ニューメイク由来の魅力に、さらなる広がりと奥行きを与えています。
構成原酒はすべてノンピートで、バーボン樽89%、オロロソシェリー樽6%、ブランデー樽5%。
華やかに立ち上がるエステル香。ほどよく香ばしいドライフルーツの爽やかなニュアンス。そしてニューメイクに含まれるラクトン由来のミルキーさやファッティさ、トフィーなニュアンス。香味の輪郭はより明確に、表情はより豊かになりました。

3つ目の「私たちの原点」について。造り込んだニューメイクこそが新道蒸溜所の核であり、当シリーズはその価値を段階的に、より深く表現していくためのシリーズです。「EX02」には、熟成によって増した香味のレイヤーの中に、確かにニューメイクの魅力が息づいています。進化の途中であっても、原点は決して揺らがない。ジャパニーズウイスキーの根源的な価値を改めて問い直し、世界に伝える。その姿勢を、味わいとして示した一本です。

- The EXPERIMENTAL Series symbolizes a new challenge for Shindo Distillery.
The word "Experimental" reflects our philosophy. With deep respect for the pioneers of Japanese whisky, we see ourselves as humble challengers, and it would be presumptuous to present our whisky as a "finished product." Instead, we wish to offer the very best expression we can create at this moment in time, and with that spirit we named this range the EXPERIMENTAL Series.

With these three themes as our guiding principles, we developed EX02.
At Shindo Distillery, our approach centers on the meticulous crafting of a beautifully sweet new make spirit and its maturation in a diverse range of casks. Faithfully expressing these commitments while clearly demonstrating our evolution, EX02 stands as the second release in the EXPERIMENTAL Series.
On the second theme, "Spirits Maturing Over Time."
About eight months have passed since the release of EX01 in June 2025. During this time, our spirits have continued to mature in an increasingly diverse range of casks, marking a clear progression in time and character.
While EX01 expressed the charm of our new make through a deliberately simple cask composition (*1), EX02 builds upon that foundation. By vatting more mature spirits, it brings greater breadth and depth to the qualities derived from our new make.
The composition consists entirely of non-peated spirits: 89% bourbon casks, 6% Oloroso sherry casks, and 5% brandy casks.
Bright estery aromas rise elegantly, followed by gently toasted dried-fruit nuances. Alongside these, the lactone-derived milky and fatty sweetness inherent to our new make reveals subtle toffee notes. The contours of the aroma and flavor have become more defined, and the expression richer in character.
(*1) Cask composition of EX01: 91% bourbon casks, 4% Oloroso sherry casks, 4% new Mizunara casks, and 1% refill Scotch cask.
On the third theme, "Our Origin."
At Shindo Distillery, the carefully crafted new make spirit is the very core of our whisky, and this series is designed to express its value step by step with increasing depth. In EX02, the charm of our new make clearly lives within the layered complexity that has developed through maturation. Even as we continue to evolve, our origin never wavers. By revisiting the fundamental value of Japanese whisky and sharing it with the world, this bottle expresses that philosophy through aroma and its aroma and palate.
We hope this whisky conveys where we stand today—and the possibilities that lie ahead.
