１．「EXPERIMENTAL FOR CORES」について
私たちの理念である「THE QUEST FOR THE ORIGINAL（独創性の追求）」にもとづき、あくまでも挑戦者として現在できる最高のご提案をさせていただこうと2025年に開発したシングルモルト・ジャパニーズウイスキー「SHINDO EXPERIMENTAL 01」。
それをベースに、さらに深いテーマをもってこだわりを注ぎ昇華させたのが「SHINDO EXPERIMENTAL FOR CORES」です。その名のとおり、よりコアなウイスキー愛好家の方々に向けて、私たちならではの挑戦の足跡をお届けします。

上記3つをテーマに掲げ、「CORES.03」の開発を行いました。当シリーズで大切にしているのは、「ウイスキーをもっと楽しく」という考え方。ウイスキーを通して、新鮮な驚きや喜びを提供することを目指しています。今回開発した第3弾では、EXシリーズ / CORESシリーズでは初めてとなるアメリカンホワイトオーク（以下、AWO）の新樽をキーに据えました。AWO新樽のフレッシュなグリーンさを表現のひとつとして用いることで、ヴァッティングの幅を広げていく。そんな想いを込めています。
AWOはウイスキー熟成用の樽の樹種として比較的に馴染みのあるものです。特にバーボンに使用された後の樽は穏やかな熟成が期待でき、AWO特有のバニラ様の香りを獲得できる樽として重宝されます。ただ私たちは今回、AWOの別の魅力に注目しました。それはテルペン類による、フレッシュな針葉樹のような心地よいグリーンの香りで、ヴァッティングの際の表現の幅がより広がるのではないかと期待したのです。ただ注意が必要なのは、テルペン類（αピネン、カジネン等）は、奥深くのリグニン分解層に存在するバニリンに比して、樹脂層から早々にアルコールに溶出するため、新樽では樽出しのタイミングを見極めなければ過度な木香を有するバランスの崩れた原酒となり、ヴァッティングに際する使い勝手も良くない状態になりがちです。
そのため、バニリンやタンニンの溶出も適度になされ、かつニューメイクに含まれる未熟臭消失のタイミングを待つことが必要となります。当蒸留所でもその時期を見計らっていましたが、3年が経過した頃に変化の兆しが見られました。森の香りを思わせるグリーンな香りとバニラ様の甘い香りのバランスが適度にとれ、DMS由来の未熟な香りが次第におさまっていくのを感じられる段階が来たのです。こうして熟成を待つこと4年。いよいよ、AWO新樽の熟成原酒を使用するに至りました。
ヴァッティングにおいては、AWO新樽熟成ノンピート原酒（4年熟成）24％をはじめ、バーボン樽熟成ピーテッド原酒を36％、（以下はすべてノンピート原酒）シーズニングシェリー樽熟成原酒（4年熟成）14％、バーボン樽12％、ミズナラ新樽6％、オロロソシェリー樽4％、コニャック樽4％で構成。
グリーンなAWO新樽は、やや控えめに抑えたピートと絶妙に掛け合わせることで若さを感じさせないどころか、土や苔のニュアンスを強調し、あたかもスコットランドの深い渓谷や丘陵に佇んでいるような香味を表現。一方で、少量のミズナラをヴァッティングすることで付与された伽羅を思わせるラクトン由来の香木様の香りや、新道の原酒の甘い香りは味わいに温かみをプラス。馥郁としたバニラ香やシェリー樽の果実味とも相まって、甘やかさを中心にスモーキーさ、華やかさ、ビターな落ち着きを兼ね備えて渾然とまとまり、円熟した味わいとなっています。
単体では爽やかなグリーンさをもったAWO新樽は、私たちに新しい表現の可能性を与えてくれると同時に、使い方次第では苔むしたグリーンさの表現も可能であるという、熟成やヴァッティングの世界における深淵の一端を垣間見るような経験をもたらしました。ヴァッティングにあたっての私たちのこだわりを感じていただきながら、ぜひご賞味ください。

Guided by our philosophy, "THE QUEST FOR THE ORIGINAL," we released SHINDO EXPERIMENTAL 01 in 2025 as a Single Malt Japanese Whisky that represented our best possible expression at the time—an ambitious release created from the perspective of perpetual challengers. Building upon that foundation, SHINDO EXPERIMENTAL FOR CORES takes our exploration to a deeper level. As its name suggests, this series is dedicated to passionate whisky enthusiasts, capturing the spirit of our ongoing pursuit of originality and sharing the milestones of our journey through carefully crafted expressions.

At the heart of the CORES series lies one simple idea: making whisky even more enjoyable. Our goal is to bring fresh discoveries and genuine excitement through every release. For this third edition, we have chosen new American White Oak (AWO) casks as the defining component for the first time in both the EXPERIMENTAL and CORES series. By embracing the vibrant, green character unique to new AWO casks as an expressive element, we sought to expand the possibilities of our vatting philosophy.
American White Oak is, of course, one of the most familiar woods used for whisky maturation. Ex-bourbon barrels made from AWO are especially prized for their gentle maturation and their ability to impart classic vanilla notes. This time, however, we focused on a different characteristic of AWO: the refreshing, conifer-like green aromas derived from terpenes. We believed these aromas could broaden the expressive range available in vatting. Working with new AWO casks, however, requires careful timing. Terpenes such as α-pinene and cadinene are extracted from the resin-rich outer layers of the wood much earlier than vanillin, which develops deeper within the lignin layer. If spirit is removed from the cask too early, excessive woody and resinous notes dominate, resulting in an unbalanced whisky that is difficult to incorporate effectively into a vatting. Working with new AWO casks, however, requires careful timing. Terpenes such as α-pinene and cadinene are extracted from the resin-rich outer layers of the wood much earlier than vanillin, which develops deeper within the lignin layer. If spirit is removed from the cask too early, excessive woody and resinous notes dominate, resulting in an unbalanced whisky that is difficult to incorporate effectively into a vatting.
It is therefore essential to wait until the extraction of vanillin and tannins has progressed sufficiently, while allowing the immature notes present in the new make spirit to gradually fade. At our distillery, we carefully monitored this transformation. Around the third year of maturation, we began to notice a remarkable change: the vibrant forest-like green aromas and sweet vanilla notes reached a harmonious balance, while the immature sulphury notes associated with DMS steadily subsided.
After patiently waiting four years, we finally reached the point where our new AWO cask-matured spirit was ready to become part of this release.
The vatting is composed of : ・24% non-peated spirit matured for four years in new American White Oak casks. ・36% peated spirit matured in bourbon casks. ・14% non-peated spirit matured for four years in seasoned sherry casks. ・12% non-peated bourbon cask spirit. ・6% non-peated new Mizunara cask spirit. ・4% non-peated Oloroso sherry cask spirit. ・4% non-peated Cognac cask spirit.
The fresh green character of the new AWO cask is paired with a restrained level of peat, creating remarkable harmony. Rather than emphasizing youth, this combination enhances earthy and moss-like nuances, evoking the feeling of standing among the deep glens and rolling hills of Scotland. A small proportion of new Mizunara cask spirit contributes elegant lactone-derived aromas reminiscent of kyara (premium aromatic wood), while the naturally sweet character of Shindo's spirit adds warmth and richness to the palate. Together with generous vanilla notes and the fruitiness of the sherry casks, these elements unite smoky, floral, sweet, and gently bitter characteristics into a beautifully integrated and mature whisky.
On its own, new AWO cask spirit offers a lively and refreshing green character. Through this project, however, we discovered that, depending on how it is matured and incorporated into a vatting, it can also express deeper, moss-covered woodland nuances. For us, this experience offered a fascinating glimpse into the profound possibilities that lie within the worlds of maturation and vatting.
