UKIHA BUBBLES 2023
「UKIHA BUBBLES」の第三弾、「UKIHA BUBBLES 2023年ヴィンテージ」。福岡県うきは市産ぶどうを100%使用しています。
2023年より空調設備の整った新しいワイナリーでのワイン造りがはじまりました（2022年ヴィンテージまではウイスキー蒸留器のある部屋で醸造を実施）。ワイナリー内の温度をコントロールすることで、発酵時の温度管理をより厳格にできるようになり健全な発酵へとつながりました。今回の「UKIHA BUBBLES」は、自社園地のピオーネをMC（マセラシオンカルボニック製法）で醸したもろみと、キャンベルアーリーをダイレクトプレスで醸したもろみをブレンドしました。また、ワインに深みをもたらすために巨峰も一部ブレンドしております。完全に熟したピオーネとすこし若いピオーネを２回に分けて収穫することで、酸度からくるフレッシュさと食用ブドウらしい心地よい柔らかさを表現しています。
2023年9月に瓶詰を行い、約10ヵ月間の瓶内二次発酵/熟成を行いました。2022年ヴィンテージよりもブドウの収穫を早めることによって適度な酸を残し、よりフレッシュな果実感を感じられる”グビグビ系”微発泡ワインができ上がりました。野生酵母使用。亜硫酸無添加。無濾過、無清澄。補糖、補酸も一切行っておりません。

Third Edition of UKIHA BUBBLES. UKIHA BUBBLES 2023 Vintage. Made with 100% grapes from Ukiha City, Fukuoka Prefecture.
Starting in 2023, our winemaking process began in a new winery equipped with ACs (until the 2022 vintage, we fermented in a room with whiskey stills). By controlling the winery’s temperature, we could manage fermentation temperatures more strictly, resulting in healthier fermentation. For this edition of UKIHA BUBBLES, must from our own Pione grapes fermented using carbonic maceration (MC) was blended with must from Campbell Early grapes fermented through direct pressing. To add depth to the wine, a portion of Kyoho grapes was also blended. By harvesting fully ripe Pione grapes and slightly younger ones in two stages, we achieved a balance of freshness from acidity and the pleasant softness typical of table grapes.
Bottled in September 2023, the wine underwent secondary fermentation and aging in the bottle for approximately 10 months. By harvesting the grapes earlier than in the 2022 vintage, we retained adequate acidity, creating a fresher fruitiness in this “glou-glou” style slightly sparkling wine. Wild yeast. No added sulfites. Unfiltered and unfined. No chaptalization or acidification.
